Whether it's date night or Friday evening with the kids, this pizza recipe is bound to create some delicious memories in the kitchen.
Cremini, Gorgonzola and Gruyere Pizza
3 tablespoons olive oil + more for drizzle
4 cloves garlic, minced
8 ounces cremini mushrooms, sliced
Salt and pepper
½ teaspoon fresh thyme
½ teaspoon chopped fresh oregano
¼ cup cornmeal
1 homemade or pre-purchased classic pizza crust
1 cup gruyere cheese, shredded
½ cup gorgonzola, cut into 1-inch cubes
½ brown onion, sliced
Preheat oven to 450°F.
Add the garlic to a cold pan, add olive oil, and heat, stirring frequently, until fragrant, about 1 minute.
Stir in mushrooms, thyme and oregano. Cook, stirring occasionally until mushrooms are tender and browned, about 5-6 minutes; season with salt and pepper to taste.
Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. Transfer to a parchment lined baking sheet or pizza pan.
Top with the cooked mushrooms, and sprinkle all the cheese.
Bake for 8-10 minutes until cheese is bubbling and dough is crisp.
Drizzle olive oil over the pizza and enjoy!
