If you are looking for a way to include more vegetables in your (or your kids) diet, this recipe is great for you! Our irresistible Sesame Parmesan Cauliflower bites are truly delicious and they are packed with nutrients.
Roasting cauliflower is my all-time favorite way of preparing it. Cauliflower is certainly popular right now, and for a good reason. We find that roasting cauliflower brings out its delicious flavor and when you pair it with sesame, parmesan and breadcrumbs, you create a dish that no-one can refuse.
Whether you have these as an after-school snack, or as a side dish with dinner, make sure you use a high quality olive oil, as it will be absorbed and rich in flavor.
We like to top this dish off with our favorite garlic aioli or homemade tahini sauce, but they also taste delicious on their own.
1 large head cauliflower, broken into bite size florets
4-5 tbs top quality olive oil
4-5 cloves of garlic, pressed or minced to a paste
4 tbs breadcrumbs
2 tbs sesame seeds
4 tbs grated parmesan cheese
1/2 tsp sweet paprika
1 tsp salt
1 tbs chopped parsley, and lemon wedges for garnish
Directions
Preheat oven to 375 degrees.
Line a baking sheet with parchment paper.
Mix olive oil and garlic in a medium sized bowl.
Mix all other ingredients in another medium sized bowl.
Dip each bite-sized cauliflower floret into the garlic oil, then roll it in the dry ingredients to cover. Shake to remove excess breading, and place on the lined baking sheet.
To ensure crispy results, don't crowd your pan, and keep florets with at least 1/2 inch of space around them. Use a second baking sheet if needed.
Roast for 25-30 minutes, carefully turning the florets once mid way.
Remove from roasting pan and serve immediately, garnish with fresh chopped parsley and lemon wedges
